It's Fall Y'all! Bonfires, egg hunts and cooking!

Fall on the farm is so much fun!  Especially with the addition of the fire pit.  We love to have bonfires and friends over.  The emus are getting ready to start laying eggs again which calls for an egg hunt twice a day everyday!  The only thing missing this fall is my son who is away at college now. It has been a very different past couple of months without him home. I just don't know how the time went by so fast. It seems like he should be in middle school, not college. I just finished my kitchen countertop remodel. Actually it's not finished, but my part of it is. I made a collage of photos and covered them with a clear epoxy resin. I have photos of our family from the time Jay and I started dating and the kids at all different stages of their lives. It's like a huge scrapbook that is always open for the world to see. I figured as much time as I spend in the kitchen (because I love to cook), I wanted to constantly be reminded of things that bring me joy. Besides photos I have quotes, Bible verses, and some of our artwork.

All we have to do now is get the sink and faucet in. I'm so excited!  Then I can get back to cooking. I'm going to share a recipe from our favorite treat over the summer. It would make a great fall dessert also just by switching the topping.

JaAnna's Sugar Cookie Cheesecake Tarts

1 box sugar cookie mix (make as directed)
2 - 8 oz. bars cream cheese
1 - stick butter or margarine
1 - cup sugar
Fruit of your choice, or spice of your choice for topping

Mix sugar cookies and roll into about 2" balls
Mash into lined muffin tins forming a "bowl" or crust
Bake as directed until golden brown
Remove from oven and allow to fully cool

Mix cream cheese, butter, and sugar until creamy
Scoop into cookie crusts (pile high)
Top with fruit or spice of your choice
Place in refrigerator to chill and serve!

This summer I used blueberries and strawberries. For fall a pumpkin filling would be a good topping sprinkled with cinnamon or a cooked apple topping. Use your imagination!

Blessings!!

JaAnna
